Baked rigatoni with salami
INGREDIENTS:
- 300gr rigatoni
- 100gr salami sliced
- 1 red onion peeled and sliced
- 1 clove of garlic peeled and sliced
- 4 tbs of balsamic vinegar
- 1 tin of chopped tomatoes
- 3 tsp of creme fraiche
- 3 basil leaves
- 2 fresh mozarella sliced
- pepper
- olive oil
INSTRUCTIONS:
- cook the rigatoni in boiling water for 10 min
- drain and reserve
- in a frying pan heat the olive oil
- fry 1/3 of the salami until crisp
- add onion and garlic
- and cook until onion is soft
- add balsamic vinegar, chopped tomatos, creme fraiche and basil
- mix everything and season to taste with salt and pepper
- simmer for a few minutes
- add the rigatoni to a baking tray
- pour the sauce on top of the rigatoni
- lay the salami and mozzarella on top of it
- bake for 25 min at 190C or until golden
