Sweet Pumpkin Soup
INGREDIENTS:
- pumpkin
- 50 gr of butter
- salt
- 50 ml of milk
- cinnamon
- 1 ts of peanut butter
- 1 tsp of coconut milk (optional)
INSTRUCTIONS:
- cut the pumpkin in half
- remove all the pumpkin seeds and strings
- reserve the seeds and use them in other recipes
- skin the pumpkin
- cut the pumpkin into small pieces
- add the butter, the pumpkin and salt to a pan
- cook until tender
- mix together every now then with a wooden spoon, add a bit of water if needed.
- once the pumpkin pieces are soft remove from heat
- add the milk
- blend the pumpkin
- add the cinnamon, peanut butter and the coconut milk and mix everything
