Banana muffins (low carbs)
Ingredients:
- 1 cup of peanut flour
- 1/4 milk or water
- 2 ripe bananas (mashed)
- 1 ts of baking soda
- 1ts of vanilla extract
- 3 eggs
- a bit of salt
- 1 ts of cinnamon
- blue berries (optional)
Instructions:
- preheat the oven to 150C
- grease a muffins tin with butter and add a bit of coconut flour
- mix the peanut flour with the milk until you get a paste
- mix in all the ingredients except the blue berries
- add to the tin 1 spoon per hole add in 3-4 blue berries per muffin
- bake for 15min or until browned
