Sweetcorn and spinach fritters
This is super quick and easy to do 🙂
Ingredients:
- 2 handfuls of frozen sweetcorn (you can use canned as well)
- 1 handful of spinach leaves
- 1 small garlic clove, chushed
- 1 spring onion
- 50 gr plain flour
- a pinch of baking powder
- 1 egg
- 50 ml of milk
- rapeseed oil for frying
Instructions:
- Microwave the sweetcorn for 1 min until cooked
- add the spring onion to the food processor and pulse
- add the spinach leaves pulse until there are no big pieces
- add all other ingredients and pulse until almost but not completely smooth
- heat the oil in a frying pan and add full spoon to of the mixture to the desired size
- fry for 1 min on each side until golden
- serve warm or freeze
