Easy tomato sauce
Ingredients:
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- garlic clove, crushed
- 400g chopped tomatoes (1x tin – or 4 fresh tomatoes skinned)
- 1 tsp sun-dried tomato paste (optional)
- 1 tsp caster sugar
- ½ lemon juiced
- black pepper
- salt
Instructions:
- Heat the oil in a lidded non-stick frying pan and stir-fry the onion over a medium heat for 5 minutes or until soft and transparent
- Add the garlic and stir for a minute, then add the rest of the ingredients
- Stir well, bring to a simmer, cover and cook over a medium low heat for 20 minutes
- Take the lid off and simmer for another 10 minutes or so, until the sauce is nice and thick
