Basic Bolognese


  • olive oil
  • 2 onions
  • 2 celery stalks
  • 4 carrots grated or chopped
  • 4 garlic cloves, crushed
  • 500gr of minced beef
  • 800 gr of tinned chopped tomatoes or about 14 tomatoes
  • 2 tbs of tomato puree
  • a bit of worcestershire sauce
  • 1 ts of thyme leaves ( fresh preferably)
  • 800ml of beef stock
  • Pasta or Rice something to go with the sauce


  1. heat the olive oil in a sauce pan and add the onion, celery, carrot and garlic and saute for 5 min
  2. add the minced beef and saute until brown stirring occasionally
  3. add all remaining ingredients stir well and then bring to the boil
  4. cover and simmer for 15 min
  5. blend the sauce and your done

Note: this freezes really well s you can freeze individual doses and use when needed.
