Easy tomato sauce


  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • garlic clove, crushed
  • 400g chopped tomatoes (1x tin – or 4 fresh tomatoes skinned)
  • 1 tsp sun-dried tomato paste (optional)
  • 1 tsp caster sugar
  • ½ lemon juiced
  • black pepper
  • salt


  1. Heat the oil in a lidded non-stick frying pan and stir-fry the onion over a medium heat for 5 minutes or until soft and transparent
  2. Add the garlic and stir for a minute, then add the rest of the ingredients
  3. Stir well, bring to a simmer, cover and cook over a medium low heat for 20 minutes
  4. Take the lid off and simmer for another 10 minutes or so, until the sauce is nice and thick
