Lovely lentils


  • 1/2 onion
  • 2 carrots
  • 1 celery stick
  • 1 tbsp olive oil
  • 50 gr split red lentils
  • 200gr sweet potato
  • 500ml chicken stock


  1. chop the onion, carrot and celery (mini chopper)
  2. peel the sweet potato and dice
  3. heat the olive oil in a pan
  4. saute the onion, carrot and celery for 5 min or until soft
  5. add lentils, sweet potato and stock and bring to the boil
  6. turn don the heat and simmer for 20 min or until everything is cooked and soft.
