Slow cooked Lamb Shank with roasted veg


  • 4 lamb shanks
  • 3 garlic cloves (crushed)
  • 3 tomatos or 3 tbs of tomato paste
  • rosemary
  • thyme
  • 4 tbs of olive oil
  • salt
  • pepper
  • root vegetables: parsnips or carrots


  1. make the marinate the day before and leave overnight
  2. for the marinate peel the tomatos and chop in the food processor
  3. add the cruched garlic, rosemary, thyme, olive oil, salt and pepper
  4. rub the marinate in the lamb shanks and leave in the fridge over night
  6. preheat the oven to 160C
  7. add the lambshanks marinate to a oven proof dish
  8. add 1/2 pint of water and cover with foil
  9. let cook for 1.5 to 2 hours
  10. add a bit of water if needed
  11. remove the foil and add the vegetables cook for another 45min to 1h
