Sweetcorn and spinach fritters

This is super quick and easy to do 🙂


  • 2 handfuls of frozen sweetcorn (you can use canned as well)
  • 1 handful of spinach leaves
  • 1 small garlic clove, chushed
  • 1 spring onion
  • 50 gr plain flour
  • a pinch of baking powder
  • 1 egg
  • 50 ml of milk
  • rapeseed oil for frying


  1. Microwave the sweetcorn for 1 min until cooked
  2. add the spring onion to the food processor and pulse
  3. add the spinach leaves pulse until there are no big pieces
  4. add all other ingredients and pulse until almost but not completely smooth
  5. heat the oil in a frying pan and add full spoon to of the mixture to the desired size
  6. fry for 1 min on each side until golden
  7. serve warm or freeze
