Easy Beef Chilli Hot Pot
Ingredients:
- 2 tbsp of olive oil
- 400gr of diced beef
- 1 brown onion
- 1 garlic clove
- 35gr chilli seasoning or make your own check notes
- 400gr can chopped tomatos
- 400gr can kidney beans (do not drain)
Instructions:
- peel the onion and garlic and chop finely (I do this in our mini chopper), reserve
- heat 1 tbsp of olive oil in a large sauce pan over high heat.
- cook the beef for about 3 min until browned and sealed.
- transfer to a bowl and reserve
- reduce the heat and and the other tbsp of olive oil and the onion and garlic and cook until softned, stirring often.
- add the seasoning and cook for a minute while stirring
- add the tomatos and beans and stir
- add the beef back in
- add a bit of water if it looks like there isn’t enough.
- bring to the boil then reduce heat to low and cover.
- season with salt and pepper.
- Simmer for 1h to 1h 30 min until beef is tender, stirring occasionally and add more water if/as needed.
Note:
HOMEMADE CHILLI SEASONING
Mix the following in a bowl
- 1 tbsp of chilli powder
- 1/2 tsp ground cumin
- 1/4 tsp cayenne pepper (only add if your chilli is not hot)
- 1 tsp salt
- 1/4 tsp ground pepper
- 1/2 tsp oregano
You can store this in an air tight container for a few months.
