Bolognese with Hidden Veg

Ingredients:

  • 1 tbsp olive oil
  • 1 small red onion chopped
  • 1 small leek chopped
  • 3 mushrooms sliced or chopped
  • 1 carrot grated or chopped
  • 1 celery stalk diced
  • 1 garlic clove crushed or chopped
  • 150 ml of chicken stock
  • 250 minced beef
  • 2 cans of chopped tomatos (400 gr each)
  • 3 tbsp of tomato puree

Instructions:

  1. Prepare all the veggies, when I say chopp I just use my electric mini chopper, but if you don’t have one to hand use the alternatives or just chop by hand. It doesn’t need to be precise since everything will be blended at some point. Just be ware that if you have big chunks you should allow longer cooking times.
  2. heat the olive oil in a pan and saute the onion for about 3 min
  3. add garlic and cook for another min
  4. add the minced beef and cook for about 5 min until brown, mixing well with a wooden spoon. Try to break the meat as much as possible for even cooking
  5.  add leek, mushrooms, carrots and celery and saute for another 7 min
  6. add chopped tomatos and tomato puree and the stock and cook for another 10 to 15 min or until cooked.
  7. add all to a food processor or use a hand blender.
