Banana muffins (low carbs)


  • 1 cup of peanut flour
  • 1/4 milk or water
  • 2 ripe bananas (mashed)
  • 1 ts of baking soda
  • 1ts of vanilla extract
  • 3 eggs
  • a bit of salt
  • 1 ts of cinnamon
  • blue berries (optional)


  1.  preheat the oven to 150C
  2. grease a muffins tin with butter and add a bit of coconut flour
  3. mix the peanut flour with the milk until you get a paste
  4. mix in all the ingredients except the blue berries
  5.  add to the tin 1 spoon per hole add in 3-4 blue berries per muffin
  6. bake for 15min or until browned
