Pistachio muffins

Ingredients for 12 muffins:

  • 4 eggs
  • 25 gr ground almonds (2 tbs)
  • 100 gr of ground pistachios
  • 35 gr milk (4 tbs )
  • 1 tbs honey (optional)
  • 10 gr agave (1 tbs )
  • 1 gr baking powder
  • 6 gr of vanilla extract (1 ts)
  • 5 gr of cinnamon
  • pinch of salt
  • blueberries (optional)

To grease the baking tray

  • butter
  • almond flour or coconut flour for the baking tray

 

Instructions:

  1. preheat the oven to 150C
  2. add some butter to a muffin baking tray to grease and than add some flour this is to prevent it from sticking
  3. mix all ingredients, except the blueberries
  4. add 2 spoons of the mix to each muffin tin
  5. OPTIONAL Add a few blue berries to each muffin tin, you can also try other berries or even shredded carrot
  6. bake for 15 min
