Slow cooked Lamb Shank with roasted veg
Ingredients:
- 4 lamb shanks
- 3 garlic cloves (crushed)
- 3 tomatos or 3 tbs of tomato paste
- rosemary
- thyme
- 4 tbs of olive oil
- salt
- pepper
- root vegetables: parsnips or carrots
Instructions:
- make the marinate the day before and leave overnight
- for the marinate peel the tomatos and chop in the food processor
- add the cruched garlic, rosemary, thyme, olive oil, salt and pepper
- rub the marinate in the lamb shanks and leave in the fridge over night
- NEXT DAY
- preheat the oven to 160C
- add the lambshanks marinate to a oven proof dish
- add 1/2 pint of water and cover with foil
- let cook for 1.5 to 2 hours
- add a bit of water if needed
- remove the foil and add the vegetables cook for another 45min to 1h
