Lemon and poppy seeds Low carbs muffins
Ingredients:
- 3 eggs
- 1 lemon
- 1/4 cup of coconut oil
- 1/4 cup of honey
- 1 ts of vanilla extract
- a pinch of salt
- 1/3 cup of coconut flour
- 1/2 ts of baking soda
- 1 tbs of poppy seeds
Instructions:
- Pre heat the oven to 120C degrees
- get the zest of the lemon and reserve
- juice the lemon and reserve
- melt the coconut oil in the microwave if needed
- add all ingredients to a mixing bowl and mix altogether
- add one tablespoon each hole of a muffin tin
- bake for 25 min or a bit more if needed
- remove from the muffin tin and let it to cool on a wire rack
