Lemon and poppy seeds Low carbs muffins

Ingredients:

  • 3 eggs
  • 1 lemon
  • 1/4 cup of coconut oil
  • 1/4 cup of honey
  • 1 ts of vanilla extract
  • a pinch of salt
  • 1/3 cup of coconut  flour
  • 1/2 ts of baking soda
  • 1 tbs of poppy seeds

Instructions:

  1. Pre heat the oven to 120C degrees
  2. get the zest of the lemon and reserve
  3. juice the lemon and reserve
  4. melt the coconut oil in the microwave if needed
  5. add all ingredients to a mixing bowl and mix altogether
  6. add one tablespoon each hole of a muffin tin
  7. bake for 25 min or a bit more if needed
  8. remove from the muffin tin and let it to cool on a wire rack
